What is falafel made of in Israel?

Hey! I'm a huge fan of falafels and have made them myself many times. I recently found out that they originated from Israel or Egypt (not sure), and that it's Middle Eastern food. What is the meat in falafels traditionally made of? Oh and traditional toppings are a must! Are there any recommended recipes?

Falafel is usually made from legumes like chickpeas or fava beans. These legumes are grounded and then mixed with different herbs and spices. The mixture is formed into a ball and then deep-fried. Falafel is served with fresh vegetables in a warm pita pocket with tahini sauce.
