Why is the St George monastery important to Christians?

What makes this monastery so significant? Did St George convert to Christianity? If so, when did that happen?

Saint George was honoured by Christians as a martyr after he was tortured and beheaded. This happened after the roman emperor Diocletian banned Christianity in his army. Legend has it that his head was sent to Rome, while his body was sent to Lod (now Israel) for burial. In Christianity, he is important as he stood up and died for his faith.
